- 2 cans (15 oz each) black beans, drained and rinsed
- 1/2 yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp chili powder

- 1 egg, beaten (or 1 flax egg to make it vegan โ works, slightly softer)
- 1 tbsp soy sauce
- 1 tsp kosher salt, 1/2 tsp black pepper
- 4 hamburger buns

Instructions
- Heat the oven to 325ยฐF (165ยฐC). Spread the drained beans on a sheet pan and bake 10 minutes, until the skins split and they look dry. This step is the whole recipe โ do not skip it.
- Meanwhile, sautรฉ the onion in a little oil until soft and lightly browned, about 5 minutes. Add the garlic and spices and cook 1 minute more, until fragrant.
- Mash two-thirds of the dried beans coarsely in a large bowl โ chunky, not smooth. Stir in the remaining whole beans.
- Add the onion mixture, panko, egg, soy sauce, salt and pepper. Mix until it just holds together when squeezed.
- Form 4 patties about 3/4" thick, pressing firmly. Chill 15 minutes โ cold patties hold together dramatically better.
- Heat a heavy skillet over medium-high with enough oil to generously coat the bottom.
- Sear the patties 4โ5 minutes per side, flipping ONCE with a wide spatula, until deeply browned and crusty. Add cheese after the flip if you like.
