Ingredients
- 1.5 lb (680g) ground beef, 80/20 chuck
- 8 slices bacon
- 4 slices sharp cheddar
- 8 large iceberg or butter lettuce leaves (for wrapping)
- Keto burger sauce: 1/2 cup mayo + 1 tbsp yellow mustard + 1 tsp vinegar + pinch of salt (no ketchup)
- 1 avocado, sliced (optional, extra richness)
- Sliced tomato, red onion, dill pickles
- Kosher salt and black pepper
Instructions
- Cook the bacon in a skillet until crisp. Set aside on paper towels and keep a little of the fat in the pan.
- Form the beef into 4 dimpled patties. Season both sides with salt and pepper just before cooking.
- Sear the patties in the bacon fat over high heat, undisturbed, 3 minutes.
- Flip, top with cheddar, and cook 2โ3 minutes more to 160ยฐF (71ยฐC) internal, covering briefly to melt the cheese.
- Whisk together the mayo, mustard, vinegar and a pinch of salt for the keto sauce.
- Lay out 2 lettuce leaves per burger, overlapping like a bun.
- Build: sauce, patty with cheddar, bacon, tomato, onion, pickles, and avocado if using.
- Fold the lettuce around the burger like a wrap, or eat it open-faced with a fork.
