- 1.5 lb (680g) ground beef, 80/20 chuck
- 1/2 tsp cayenne pepper (more to taste)
- 1 tsp smoked paprika
- 4 slices pepper jack cheese
- 2 fresh jalapeños, thinly sliced
- 1/2 cup pickled jalapeños
- For the spicy mayo: 1/2 cup mayo + 1 tbsp sriracha + squeeze of lime
- 4 buns; lettuce to serve
Instructions
- Stir the mayo, sriracha and lime together; set the spicy mayo aside.
- Mix the cayenne and smoked paprika with salt and pepper. Form 4 dimpled patties and season the outsides just before cooking.
- Sear the patties on a hot griddle or pan, undisturbed, 3 minutes.
- Flip, top with pepper jack and a few fresh jalapeño slices, and cook 2–3 minutes more to 160°F (71°C).
- Toast the buns and spread spicy mayo on both halves.
- Build: bottom bun with mayo, lettuce, patty with cheese and jalapeños, pickled jalapeños, top bun.
