Ingredients
- 1 lb (450g) ground beef, 80/20 chuck
- 12 small soft square dinner rolls or slider buns
- 1 large onion, very finely diced or grated
- 6 slices American cheese, halved
- 12 dill pickle slices
- 1/4 cup (60ml) water or beef broth (for steaming)
- Kosher salt and black pepper
Instructions
- Spread the finely diced onion in an even layer on a griddle or large skillet over medium heat and season with salt.
- Roll the beef very thin between parchment and cut into small squares (about 2.5"). Poke five small holes in each patty โ the holes help them steam through quickly.
- Lay the patties directly on top of the onions. Season, then add the water or broth to the pan and immediately cover with a lid or foil.
- Steam 4โ5 minutes until the patties are cooked through to 160ยฐF (71ยฐC) and the onions are soft. Place half a slice of cheese on each in the last minute to melt.
- Warm the square buns in the steam. Lift each patty with its onions onto a bun, add a pickle, cap and serve hot in a stack.
