The restaurant's actual formula is proprietary, so we're not claiming to reproduce it exactly; instead we recreate the profile with two thin, well-seared beef patties and a from-scratch sauce that lands in the same tangy-sweet territory.

Ingredients
- 1 lb (450g) ground beef, 80/20 chuck
- 4 sesame seed hamburger buns, plus 4 extra bun bottoms (for the middle "club" layer)
- 1 cup (70g) shredded iceberg lettuce
- 4 slices American cheese
- 2 tbsp (20g) finely diced white onion
- 16 dill pickle slices
- Kosher salt and black pepper
- For the special sauce: 1/2 cup (115g) mayonnaise, 2 tbsp (30g) sweet pickle relish, 1 tbsp (15g) yellow mustard, 1 tsp white wine vinegar, 1 tsp sugar, 1 tsp paprika, 1/2 tsp onion powder, 1/2 tsp garlic powder
Instructions
- Make the special sauce first: whisk together all the sauce ingredients and refrigerate at least 30 minutes so the flavors meld. (Or use our ready-made recipe โ see the sauce note below.)
- Divide the beef into 8 thin patties, each slightly wider than the bun and about 1/4" thick. Season both sides with salt and pepper.
- Sear the patties on a hot griddle or cast iron for about 2 minutes per side until deeply browned, adding a slice of American cheese to 4 of them just after flipping. Cook to 160ยฐF (71ยฐC) internal.
- Lightly toast all the bun pieces (you need a top, a middle, and a bottom for each burger).
- Assemble each burger in the classic three-layer order (see assembly below) and serve immediately while warm.
